For the chorrillana

Method

Step by step, the way it is done on the island.

  1. Season the fish. Rub the fillets with the salt, pepper and garlic and let them sit 10 minutes.
  2. Fry the fish. Pat dry, dust with flour and fry in the oil over medium-high heat 3–4 minutes per side until golden. Keep warm on a platter.
  3. Start the sauce. Wipe the pan, add the 2 tbsp oil and cook the garlic and ají 1 minute. Add the onion and cook 2 minutes; it should stay a little crunchy.
  4. Finish the sauce. Add the tomatoes, oregano, vinegar and stock and cook 2–3 minutes, just until the tomatoes soften and the juices run. Season with salt and pepper.
  5. Serve. Spoon the chorrillana with all its juices over the fish and sprinkle with parsley. Serve right away.
