Method

Step by step, the way it is done on the island.

  1. Season the fish. Cut 3 slashes on each side of the fish. Rub with lime juice, then the garlic, oregano and salt. Let it sit 15 minutes.
  2. Brown the fish. Pat the fish dry and fry it in ½ inch (1 cm) of hot oil 4–5 minutes per side until golden. It will finish cooking in the sauce. Set aside.
  3. Make the sofrito. In a wide pan, cook the onion, peppers and garlic in the oil 5 minutes. Stir in the tomato paste, tomatoes and annatto and cook 3 minutes more.
  4. Add the coconut. Pour in the coconut milk, add half the cilantro and the salt and simmer 5 minutes.
  5. Simmer the fish. Lay the fish in the sauce, spoon it over, cover and simmer 8–10 minutes until the meat pulls from the bone. Finish with the rest of the cilantro.
  6. Serve. Serve with moro de guandules con coco and slices of avocado.

You need

  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • ½ red bell pepper, chopped
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • ½ tsp dried oregano
  • 2 tbsp chopped cilantro (or cilantro ancho/culantro)
  • 1 can (15 oz) green pigeon peas (guandules), drained
  • 1 can (13.5 oz) coconut milk
  • 2 cups water (about)
  • 2 cups long-grain rice, rinsed
  • 1½ tsp salt
  • 1 chicken or vegetable bouillon cube (optional)

How to make it

  1. Sofrito. In a caldero, heat the oil and cook the onion and pepper 5 minutes. Add the garlic, tomato paste, oregano and half the cilantro and cook 2 minutes.
  2. Peas and coconut. Add the guandules and stir 2 minutes. Pour in the coconut milk, water, salt and bouillon and bring to a boil. Taste: it should be well seasoned.
  3. Add the rice. Stir in the rice and boil uncovered, stirring now and then, until the liquid drops below the surface of the rice, about 6–8 minutes.
  4. Steam. Stir once from the bottom, cover tightly and cook on low 20–25 minutes. Fluff, sprinkle with the rest of the cilantro and serve, scraping up the concón from the bottom.
