Method

Step by step, the way it is done on the island.

  1. Flatten the fish. Lay the pieces between plastic wrap and tap them with a meat mallet or rolling pin to an even ½ inch (1 cm). Don’t pound too hard; hogfish is tender.
  2. Season. Toss the fish with the lime juice, salt and hot pepper and let it sit 10 minutes.
  3. Set up the coating. Beat the eggs with the evaporated milk in one dish. In another, mix the flour, crackers, seasoned salt, pepper and paprika.
  4. Coat. Pat the fish dry, dip in the egg mix, then press into the flour mix to coat well.
  5. Fry. Fry in 1 inch (2.5 cm) of oil at 350 °F (175 °C), 2–3 minutes per side until golden. Drain on a rack and serve hot with lime and hot sauce.

You need

  • 4 oz (115 g) salt pork or bacon, diced
  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • ½ green bell pepper, chopped
  • 1 stalk celery, chopped
  • 2 tbsp tomato paste
  • 1 tsp fresh thyme leaves (or ½ tsp dried)
  • 1 tbsp browning sauce (optional)
  • 1 can (15 oz) pigeon peas, with liquid
  • 2 cups long-grain rice, rinsed
  • 3 cups water (about)

How to make it

  1. Render. In a heavy pot, cook the salt pork in the oil over medium heat until crisp, about 6 minutes.
  2. Season base. Add the onion, pepper and celery and cook 5 minutes. Stir in the tomato paste, thyme, browning and hot pepper and cook 2 minutes until dark red.
  3. Peas and rice. Add the pigeon peas with their liquid, the water and salt and bring to a boil. Stir in the rice.
  4. Steam. Cover tightly and cook on the lowest heat 25 minutes until the liquid is absorbed. Fluff and serve.
