Key West Grilled Spiny Lobster with Key Lime Butter

Grilled Florida Lobster

Every August the Keys go lobster crazy for mini-season. Florida spiny lobster has no claws, so the meat is all in the tail, and the best way to cook it is split, buttered and grilled over hot coals with Key lime.

For the Key lime butter

Method

Step by step, start to finish.

  1. Make the butter. Melt the butter with the garlic over low heat for 2 minutes. Stir in the lime zest, juice, paprika, parsley and salt.
  2. Split the tails. With kitchen shears, cut down the middle of the top shell. Then use a heavy knife to split each tail in half lengthwise through the meat. Pull out the vein.
  3. Season. Brush the meat with olive oil and season with salt and pepper.
  4. Grill. Grill meat-side down over medium-high heat 3–4 minutes until marked. Turn shell-side down, brush generously with the lime butter and grill 4–5 minutes more, until the meat is white all the way through (140 °F / 60 °C).
  5. Serve. Spoon the rest of the lime butter over the tails and serve with lime wedges and black beans and rice.

You need

  • 2 cans (15 oz) black beans, drained, liquid saved (or 1 cup dry beans, cooked)
  • 1½ cups long-grain white rice, rinsed
  • 3 strips bacon, chopped (optional)
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 4 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 bay leaf
  • 2½ cups liquid: the bean liquid plus water
  • 1 tsp salt
  • 1 tbsp white vinegar

How to make it

  1. Sofrito. In a heavy pot, fry the bacon until it gives up its fat. Add the olive oil, onion and green pepper and cook 6 minutes. Add the garlic, cumin and oregano for 1 minute.
  2. Add rice and beans. Stir in the rice to coat it, then the beans, the 2½ cups liquid, bay leaf, salt and vinegar.
  3. Cook low. Bring to a boil, cover tightly and cook on the lowest heat for 20 minutes without lifting the lid.
  4. Rest. Turn off the heat and leave it covered 10 minutes more, then fluff with a fork.
