Jamaican Jerk Tuna Steaks

Jerk Tuna

Boston Bay is the birthplace of jerk. The same fiery paste of Scotch bonnet, allspice, thyme and scallion that goes on pork and chicken makes a thick yellowfin steak sing over hot coals.

Method

Step by step, the way it is done on the island.

  1. Blend the paste. Blend all the jerk paste ingredients into a thick, rough paste.
  2. Marinate. Spread about half the paste over the tuna (save the rest for another day). Refrigerate 1 hour; longer and the lime turns the outside mushy.
  3. Fire up the grill. Heat a charcoal or gas grill very hot. Clean the grates and wipe with an oiled towel.
  4. Grill. Grill the steaks 2–3 minutes per side for a pink center, until the outside is charred in spots.
  5. Serve. Rest 2 minutes, squeeze lime over and serve with rice and peas and a cold drink.

Jamaican Rice and Peas

Rice and Peas

Rice cooked in coconut milk with red kidney beans, thyme, scallion and a whole Scotch bonnet. Sunday dinner in Jamaica is not Sunday without it.

You need

  • 1 can (15 oz) red kidney beans, with their liquid
  • 1 can (13.5 oz) coconut milk
  • 1½ cups water (about)
  • 2 cups long-grain rice, rinsed
  • 2 scallions, crushed
  • 2 garlic cloves, crushed
  • 4 sprigs fresh thyme
  • 4 pimento (allspice) berries
  • 1 whole Scotch bonnet pepper
  • 1½ tsp salt
  • 1 tbsp butter

How to make it

  1. Build the liquid. Put the beans with their liquid, coconut milk and enough water to make 4 cups total into a heavy pot. Add the scallions, garlic, thyme, pimento and salt and bring to a boil.
  2. Add the rice. Stir in the rice and butter, then lay the whole Scotch bonnet on top. Do not let it burst or the pot will be fiery.
  3. Steam. When it boils again, cover tightly and cook on the lowest heat for 20–25 minutes until the liquid is absorbed.
  4. Fluff. Remove the pepper, thyme stems and scallion, fluff with a fork and serve.
